Tomato Three Ways (Consomme, Fried, Tart Tatin)

Ingredients

Tomato Consomme

  • 4 pounds tomatoes, roughly chopped
  • 1 lemongrass stalk, roughly chopped
  • 1 scallion, roughly chopped
  • 2 garlic cloves, roughly chopped
  • 1/4 jalapeno, deseeded, roughly chopped
  • sea salt and pepper
  • 1/2 cup mint
  • 1/2 pint grape tomatoes, halved
  • 1 scallion, thinly sliced

Fried Green Tomato with Basil Mayonnaise

  • 4 green tomatoes, sliced ¼ inch thick
  • 3/4 cup all purpose flour
  • 3/4 cup buttermilk
  • 1/4 teaspoon hot sauce
  • 3/4 cup yellow cornmeal
  • 1 1/2 cups panko breadcrumbs
  • Salt & Pepper

Basil Mayonnaise

  • 2 cups loosely packed basil leaves
  • 1 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon djion mustard
  • Salt & Pepper

Tomato Tart Tatin

  • 4 pints of cherry tomatoes, cut in half
  • 3 tablespoons unsalted butter, soft
  • 4 teaspoons sugar
  • 8 sun dried tomatoes, finely chopped
  • 1/2 pound of frozen puff pastry, defrosted

Thyme Whipped Goat Cheese

  • 1 cup goat cheese
  • 3 tablespoons heavy cream
  • 1 tablespoon fresh thyme leaves
  • Salt & Pepper
