- grated zest and juice of 1 lime
- 1 teaspoon mirin (5 ml)
- Pinch of Japanese pepper or cayenne
- 1/4 cup chopped fresh chives or green onions (50 ml)
- several sprigs coriander, chopped
Tuna
- 4 slices fresh tuna loin about 6 oz each (180 gm) 1 â thick
- 1 teaspoon sesame oil (5 ml)
- 2 tablespoons black sesame seeds (25 ml)
- 1 teaspoon cracked coriander seeds (5 ml)
- 1 tablespoon vegetable oil (15 ml)
- salt and pepper to taste
- several leaves Boston bib lettuce washed and dried
- 1 ripe avocado, peeled and sliced
- 1 ripe vine tomato ( when in season) , sliced
- 4 large flat Italian style buns or 8 pieces of grain bread of your choice
