Seared Fresh Tuna Sandwich with Herbed Mayo

Ingredients

Herbed Mayonnaise

  • 1/2 cup good quality mayonnaise (125 ml)
  • grated zest and juice of 1 lime
  • 1 teaspoon mirin (5 ml)
  • Pinch of Japanese pepper or cayenne
  • 1/4 cup chopped fresh chives or green onions (50 ml)
  • several sprigs coriander, chopped

Tuna

  • 4 slices fresh tuna loin about 6 oz each (180 gm) 1 “ thick
  • 1 teaspoon sesame oil (5 ml)
  • 2 tablespoons black sesame seeds (25 ml)
  • 1 teaspoon cracked coriander seeds (5 ml)
  • 1 tablespoon vegetable oil (15 ml)
  • salt and pepper to taste
  • several leaves Boston bib lettuce washed and dried
  • 1 ripe avocado, peeled and sliced
  • 1 ripe vine tomato ( when in season) , sliced
  • 4 large flat Italian style buns or 8 pieces of grain bread of your choice
