- 12 red pearl onions or shallots, peeled and cut in half
- 2 cloves of garlic, peeled and smashed
- 4 cloves
- 1/2 teaspoon fennel seeds
- 1x1 inch piece of ginger, peeled
- 1 bay leaf
- 1 cinnamon stick
- 1/3 cup capers
- 1/2 cup golden raisins
- 1/4 cup ground almonds
- 1/4 cup sliced almonds
- 2 tablespoons chopped cilantro root
- zest of 1 lemon
- can chopped cilantro for garnish
Fruit and Nut Couscous
- 1 cup couscous
- 1 1/2 cups water
- 1 cup raisins
- 1/2 cup sliced almonds, toasted
- 1/3 cup pine nuts, toasted
- 3 green onions, sliced
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
- 1 clove garlic, minced
- 1 1/2 teaspoons cinnamon
- juice of 1 lemon
- salt and pepper
Yogurt Dip
- 1 cup plain yogurt
- 2 tablespoons chopped cilantro
- 1 tablespoon honey
