1 1/2 lbs fresh oysters, shucked(reserve bottom shell(20-24)5 bunches fresh spinach, washed and stemed2 tablespoons Pernod2 tablespoons finely chopped onions1/2 teaspoon minced garlic1 dash salt, to taste white pepper1/8 teaspoon nutmeg1/2 lemon, juice of2 tablespoons finely chopped walnuts2 tablespoons finely chopped parsley4 tablespoons finely chopped walnuts2 egg yolks1 teaspoon fresh lemon juice salt white pepperWhite Wine Sauce
- 1 tablespoon minced shallot
- 1/2 teaspoon finely chopped tarragon
- 8 green peppercorns, mashed
- 1 1/2 cups dry white wine
- 1 1/2 tablespoons butter
- 2 tablespoons butter
- 3/4 cup chicken stock
- 1/2 cup whipping cream
- salt and pepper
- 1/4 teaspoon butter
