Beet Green Borscht

Ingredients

  • 1/2 cup margarine or 1/2 cup butter, divided
  • 2 medium onions, chopped small
  • 19 fluid ounces canned tomatoes, including liquid(crush tomatoes)
  • 16 cups water
  • 1 tablespoon salt
  • 5 medium potatoes, peeled and quartered
  • 3 large carrots, peeled and chopped small
  • 1 medium red beet, scrubbed and cut in half
  • 1 cup half-and-half cream
  • 4 cups chopped young beets, with tops
  • 4 medium potatoes, peeled and cubed 1/2 inch
  • 3 cups chopped fresh spinach
  • 1 medium green pepper, seeded and diced
  • 1 medium sweet red pepper, seeded and diced
  • 1 1/2 cups diagonally cut green beans(about 1 inch long)
  • 1 stalk celery, chopped small
  • 2 cups cauliflower florets
  • 1/2 cup chopped green onion
  • 1/2 cup finely choppedfresh dill weed or 3 tablespoons dried dill weed
  • 1 tablespoon lemon juice
