Southwest Black Bean Salad with Smokey Salsa Vinaigrette

Ingredients

  • 1 lb black turtle beans
  • 1 cup frozen corn kernels
  • 1/2 cup finely minced red onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 3/4 cup prepared salsa
  • 1/4 cup finely chopped fresh cilantro

  • Salsa vinaigrette

    • 2 tablespoons chipotle paste(see note)
    • 1/2 cup prepared salsa
    • 1 tablespoon chili powder
    • 1 1/2 teaspoons ground cumin
    • 1 1/2 teaspoons fresh, mincedoregano or 1/2 teaspoon dried oregano, crushed
    • 1 1/2 teaspoons ground coriander
    • 1 tablespoon kosher salt
    • 1/2 teaspoon cayenne pepper
    • 1 teaspoon finely minced garlic
    • 3 tablespoons lemon juice
    • 3 tablespoons lime juice
    • 1/2 cup red wine vinegar
    • 2 cups canola oil
