  • 1 brown onion, finely chopped
  • 2 tbs finely grated fresh ginger
  • 2 garlic cloves, crushed
  • 1 cup (160g) finely-chopped palm sugar
  • 1/4 cup (60ml) soy sauce
  • 1 cup (250ml) water
  • 2 whole star anise
  • 1 cinnamon stick
  • 2 tbs fish sauce
  • Steamed jasmine rice, to serve
  • Grapefruit salad

  • 2 pink grapefruits, peeled, segmented, reserving any juice
  • 1/2 cup (80g) toasted macadamias, coarsely chopped
  • 1 cup coriander leaves
  • 1 cup Thai basil leaves
  • 1 cup mint leaves
  • 1 tbs fish sauce
  • 1 tbs finely grated palm sugar
  • 1 tsp sesame oil
