  • 1 lemon grass stick, bruised
  • 3 kaffir lime leaves
  • 1 onion, peeled and quartered
  • 1 cup good-quality mayonnaise
  • 2 tsp sesame oil
  • 2 tbs seasoned rice wine vinegar
  • 1/4 cup sweet chilli sauce
  • 2 tsp grated fresh ginger
  • 1/2 red cabbage, shredded
  • 1/2 Chinese cabbage, shredded
  • 2 carrots, grated
  • 4 spring onions, finely sliced
  • 1 red capsicum, thinly sliced
  • 100g snow peas, ends trimmed
  • 1/2 cup roughly chopped fresh coriander leaves
  • Lime wedges, to serve
