- 1/4 cup (60ml) sunflower oil, plus extra to deep-fry
- 4 bacon rashers, cut into thin strips
- 150g mixed mushrooms (such as pine, shiitake & Swiss brown), sliced if large
- 1 tbs white wine vinegar
- 1 tsp Dijon mustard
- 6 tarragon sprigs (see note)
- 1 garlic clove, finely chopped
- 100g mixed salad leaves & edible flowers
