Lamb & spinach pilaf

Ingredients

  • 1 tbs olive oil
  • 800g trim lamb round roasts, cut into 3cm pieces
  • 1 brown onion, halved, thinly sliced
  • 2 tsp finely grated fresh ginger
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp sweet paprika
  • 400g (2 cups) basmati rice
  • 2 x 375ml ctns chicken stock
  • 1 x 150g pkt baby spinach leaves
  • Coriander & mint yoghurt (see related recipe), to serve
