Chicken kebabs with vegetable couscous

Ingredients

  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 2 tsp garlic powder
  • 2 tsp sweet paprika
  • 2 tsp ground nutmeg
  • 1/2 tsp cayenne pepper
  • 1 lemon, juiced
  • 60ml (1/4 cup) olive oil
  • 600g chicken thigh fillets, cut into 3cm pieces
  • Greek-style yoghurt and lemon wedges, to serve
  • Vegetable couscous

  • 6 eschalots, halved
  • 100ml olive oil
  • 200g butternut pumpkin, peeled, seeded, cut into 2cm pieces
  • 1 large carrot, peeled, cut into 2cm pieces
  • 1 tsp ground turmeric
  • 2 zucchinis, halved lengthwise, cut into 2cm pieces
  • 400g can chickpeas, rinsed, drained
  • 250ml (1 cup) chicken stock
  • 50g butter
  • 200g (1 cup) couscous
  • 1/4 cup roughly chopped coriander
  • 1 lemon, zested, juiced
