  • 4 x 350g thick rump steaks
  • Roman beans and tomatoes, to serve (see note)
  • Chimichurri

  • 4 cloves garlic
  • 1 bay leaf, crumbled
  • 1 tsp black peppercorns
  • 1/2 tsp dried chilli flakes
  • 2 cups firmly packed flat-leaf parsley
  • 1/2 cup firmly packed coriander leaves
  • 1 tbs firmly packed oregano leaves
  • 2 tsp thyme leaves
  • 2 tbs red wine vinegar
  • 180ml (3/4 cup) extra virgin olive oil, plus extra, to brush
