1 cup shredded red cabbage
1 tablespoon butter
1 1/2 quarts beef stock
3 tablespoons red wine vinegar
1 teaspoon brown sugar
salt and pepper to taste
2 tablespoons cornstarch blended with cold water, sour half and half or yogurt, lemon slices or chopped chives
