Rosemary Minestrone
2 cups water or unsalted stock
1 medium-size onion, coarsely chopped
1 clove garlic, minced
1 4-inch rosemary branch tip
1 tablespoon olive oil
2 ripe tomatoes, peeled and chopped
2 or 3 celery leaves, chopped
1 small carrot, cut into chunks
1 scant cup chopped cabbage
Freshly ground pepper to taste
1 cup fresh green beans, broken into 1-inch pieces
1 tablespoon whole wheat macaroni
Grated parmesan or romano cheese for garnish
