Ingredients

  • 1 can (14.5 ounces) vegetable broth
  • 1 can (11.5) ounces apricot nectar
  • 2 cups uncooked quick-cooking couscous
  • 1/2 tsp ground cinnamon
  • 1/2 tsp gound cumin
  • 1/2 tsp grated orange zest
  • 1/4 tsp crushed red pepper
  • 1 cup shredded carrots
  • 1/3 cup pitted date pieces
  • 1/3 cup slivered dried apricots
  • 1/3 cup minced green onion
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • Garnish - snipped mint and chopped cashew nuts

Description
