Chicken and Yams with Mixed Peppers Jamaican

  • 2 1/2-3 pounds boneless, skinless chicken thighs, trimmed of any fat
  • 2 Tablespoons quick-mixing flour (Wondra)
  • 1-1/4 teaspoons Caribbean Jerk Sweet and Spicy Seasoning, divided
  • 1/2 cup tomato paste
  • 1/4 cup roasted garlic-flavored canned chicken broth
  • 2 Tablespoons (dark) brown sugar, packed
  • 1/2 cup purchased mango chutney
  • 1 teaspoon freshly grated peeled ginger
  • 1 teaspoon grated fresh lime peel
  • 2 Tablespoons fresh lime juice
  • 1 Tablespoon brewed coffee (gourmet roast dark)
  • 2 Tablespoons dark rum
  • 1 medium red bell pepper, cut into 1 inch chunks
  • 1 medium green bell pepper, cut into l inch chunks
  • 1 medium yellow bell pepper, cut into l inch chunks
  • 1 small red onion, chopped
  • 4 medium yams or sweet potatoes, peeled and quartered
  • 4 servings hot cooked white rice
