- 1/2 cup purchased mango chutney
- 1 teaspoon freshly grated peeled ginger
- 1 teaspoon grated fresh lime peel
- 2 Tablespoons fresh lime juice
- 1 Tablespoon brewed coffee (gourmet roast dark)
- 2 Tablespoons dark rum
- 1 medium red bell pepper, cut into 1 inch chunks
- 1 medium green bell pepper, cut into l inch chunks
- 1 medium yellow bell pepper, cut into l inch chunks
- 1 small red onion, chopped
- 4 medium yams or sweet potatoes, peeled and quartered
- 4 servings hot cooked white rice
