Ingredients

    Tofu
    130 g extra firm tofu, cubed
    salt and pepper
    cayenne pepper, to taste
    garlic powder, to taste
    1 teaspoon canola oil

    Veggies
    175 g broccoli, stems sliced into 1/4 inch pieces and flowerlets separated into bite-sized pieces
    90 g red pepper, sliced into 11/2 inch strips
    200 g baby bok choy, stems and leaves roughly sliced
    70 g carrots, sliced into 1/8 inch pieces

    1 teaspoons canola oil

    100 g Soba noodles
    1/4 t oil or Pam spray

    Sauce
    1/4 cup Kikkoman or other soy sauce
    2 tablespoons rice vinegar
    2 teaspoons almond butter
