Baked Lasagne With Meat Sauce

Ingredients

    Bolognese sauce:
    2 tbsp/25 g butter
    2 slices bacon, finely chopped
    2 tbsp olive oil
    1 medium white onion, chopped finely
    1 garlic clove, chopped
    1 celery stalk , finely sliced
    1 carrot, finely sliced
    350g/12oz ground beef, lean or extra lean
    150 mL/ 2/3 cup red wine
    125 mL/ 0.5 cup milk
    1 X 400g/14 oz canned whole Italian plum tomatoes, chopped, with their juice
    1 bay leaf
    1/4 tsp thyme leaves

    Pasta and cheeses:
    400g/14oz dried lasagna noodles
    1 cup Mozzarella cheese, grated
    3 tbsp/40g butter

    Béchamel sauce with cheese:
    115g/0.5 cup butter
    75g/ 3/4 cup flour
    700 ml (3 cups) milk
    To taste salt and pepper
    1 bay leaf
    3 blades mace
