    * Chorizo bilbao or italian sausage, 1/2 lb.
    * Onions, raw, 2 cup, fine dice
    * Carrots, raw, 1 cup, fine dice
    * Celery, raw, 1 cup, fine dice
    * Tomatoes, diced, 1 can
    * Thyme, fresh, sprig
    * Bay Leaf, 2
    * Olive Oil, 2 tbsp
    * Garlic, 2 clove chopped
    * Tomato Paste, 2 tbsp.
    * *Balsamic Vinegar, 2 tbsp
    * Salt, to taste
    * Pepper, black, to taste
    * Swiss Chard, 4 cup, chopped
    * Water, tap, 8 cups
