* Olive Oil, 2 tbsp
* Celery, raw, 1 cup, diced
* Garlic, 3 cloves
* Onions, raw, 2 cup, chopped
* Canned Tomatoes, 1 can
* Yams, 2 cup, cubes
* Yellow Peppers (bell peppers), chopped
* Vegetable Broth, 3 cups
* Black-eyed peas (cowpeas), cooked 1.5 cup
Can add a bay leaf while simmering. I highly recommend using fire roasted canned tomatoes.
