Makeover: Zucchini-carrot Cake With Cream Cheese Frosting (by Frenchifal)

Ingredients

    CAKE:
    1/2 cup egg beaters
    3/4 cup honey
    2/3 cup applesauce
    1/2 cup all-purpose flour
    3/4 cup buckwheat flour (or vise versa)
    1 teaspoon baking powder
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1/2 teaspoon salt
    1 cup carrot, grated
    1 cup zucchini, grated and drained (I pat between paper
    towels to remove excess water)
    1/2 cup chopped walnuts

    FROSTING:
    6 ounces cream cheese, softened
    1 teaspoon vanilla
    1 cup powdered sugar


Description

I Loved The Original Recipe, But Needed Something A Little Skinnier! By Making As Cupcakes, Replacing Eggs With Egg Beaters, Oil With Applesauce, Sugar With Honey, And Mixing Up The Frosting, These Are Pretty Healthy Little Desserts!
