Spinach And Her Souffle With Avocado, Arugula Coulis

Ingredients

    2 tablespoons light butter.
    1/4 cup finely grated parmesan cheese.
    1 cup unsweetened, original almond breeze almond milk (or any type, but that is what the nutritionals are based on).
    1 small onion, peeled and studded with cloves OR a pinch of ground cloves
    3 tablespoons all purpose flour
    1 pound of baby spinach, lightly steamed and coarsely chopped.
    1 tblsp of herbs de provence
    2 tblsps of goat cheese crumbles
    2 large egg yolks
    Kosher salt and fresh ground pepper to taste (about 1/2 to 1/3 tsp)
    6 large egg whites
    Avocado watercress coulis (Recipe at the bottom).

Description

This Souffle Tastes And Smells Divine! The Bright Green Coulis Sauce Just Makes Me Think Of Spring. The Portions Are Large. It Could Serve 6 At A Brunch With Other Sides, But It Is Great For Any Meal Of The Day.
