Garden Pasta Salad- 10- 1 Cup Servings

Ingredients

    1 cup green beans halved (2/3 carb)
    2 carrots peeled and penny sliced (2 carb)
    3 cups cooked pasta (bow tie, rotini, fusilli, pene or brown rice)--- 2oz dry = 1 cup cooked. about 6 oz dry (12 carb)
    1 small yellow zucchini, thinly sliced (1/2 carb)
    1 small green zucchini, thinly sliced (1/2 carb)
    1/2 red pepper, seeded and cut into strips (1/2 carb)
    1/2 green pepper, seeded and cut into strips (1/2 carb)
    3 oz grape tomatoes (1/2 carb)
    1/4 cup fresh parsley finely chopped
    3 scallions, trimmed and chopped (1/3 carb?)
    1/2 cup chives, chopped
    1/2 cup onion fincely diced
    1/2 cup fresh peas ( 1 carb)

    Dressing:
    4 tbsp mirin
    2 tbsp olive oil (18 fat)
    3 tbsp reserved pasta liquid (or hot water)
    1/2 cup fresh basil chopped
    1 tsp dijon mustard
    1 garlic clove minced
