    1/8 cup olive oil
    1/2 medium onion, chopped
    1.5 garlic cloves, minced
    1 medium carrot, diced
    1.5 celery stalks, diced
    1/2 green pepper, diced
    1 1/4 cups low fat cheddar cheese, grated
    800mL water
