Ingredients

    2 red bell peppers, chopped (approx 352g)
    2 yellow or orange bell peppers, chopped (approx 312g)
    2 cups cherry tomatoes (approx 300g)
    2 lbs. green beans
    2 cups mushrooms, cut into chunks (approx 256g)
    3 large onions (approx 412g)
    cauliflower, 1 med-large head, broken into florets (approx 840g)
    broccoli crowns, 1.5 lbs, broken into florets (approx 643g)
    4 carrots, cut into rounds (approx 270g)
    2 tbsp Pepper
    7-8 cloves garlic (approx 37g)
    1/2 cup olive oil
    6 oz uncooked orzo
    12 oz regular feta cheese, crumbled
    4 tbsp lemon juice
    2 tbsp basil (fresh if possible)
