Ingredients
- FIVE SERVINGS:
10 oz. 85% lean ground beef, browned & graveled
... w/half tsp. salt & 1/8 to 1/4 tsp. black pepper
70 g. REAL bacon bits, chopped up finer
... {I like Kirkland brand!}
10 oz. white beans, drained & rinsed in cold water
... {I like S&W brand!)
160 g. Brown Minute Rice
... cooked according to package directions ~ w/1 tsp. salt & 1/4 to 1/2 tsp. black pepper.
7.5 oz. (212.55 g.) each:
... sweet onions, celery, spinach ~ all finely chopped; orange sweet bell pepper ~ diced or chopped; and sweet kernal corn ~ just the way it is. :)
22.5 oz. (637.65 g.) petite diced canned tomatoes, *well*-drained
... {I like S&W or Hunts brand!}
22.5 oz. Russet potatoes, cubed
... brush w/olive oil (or spray w/olive oil cooking spray) & bake in 450 degree oven for 25 minutes
Cheese Sauce:
4 tbsp. I Can't Believe It's Not Butter spray (68 g.)
4 tbsp. x-fine flour for sauces {I like Gold Medal)
4 tsp. dry mustard {I like Coleman's}
1 tsp. salt
1/4 to 1/2 tsp. black pepper
2 cups skim milk
4 oz. cheddar cheese
Note about the black pepper: I like the x-tra fine grind @Costco... if using that kind, go w/the smaller amounts.
Note about tomatoes: it's also very good to slice cherry or grape tomatoes & use those in this dish! {But nutritional info has been calculated using can'd petite diced tomatoes ~ it can't be *that* different!}
