Double Mushroom Risotto

Ingredients

    1/2 ounce dried mushrooms, such as porcini, shiitake, or cepes
    1 cup boiling water
    2 cups Chicken Stock or Vegetable Stock or low-sodium chicken broth
    1 tablespoon olive oil
    4 large shallots, finely chopped
    8 ounces fresh mushrooms, sliced
    1/4 teaspoon each salt and black pepper, or to taste
    1 cup arborio, basmati, or long-grain white rice
    1/2 cup dry white wine or water
    3 tablespoons grated Parmesan cheese
    1 teaspoon unsalted butter or margarine
