1 lb. mushrooms, sliced (button, shiitake, etc.)
1 TB garlic, chopped
1 c. white wine (or Vermouth)
28 oz. canned diced tomatoes, with juice
3 TB tomato paste
2 c. chicken stock
1 bay leaf
4 sprigs thyme (or 1 tsp dried)
1/4 c. basil chiffonade (or 1 tsp dried)
2 tsp ground fennel
1 TB parsley, finely chopped
