Ingredients
- 1/2 cup quinoa
1 cup veg stock or water
1 cup black beans
prepared pico del gallo (however much you want) or just chopped tomato, onion, cilantro and jalapeno
1/4 cup prepared guacamole (I use AvoClassic original)
lime juice to taste approx 2 tbs
