    1/2 teaspoon prepared Dijon mustard
    4 eggs
    1 1/4 cups freshly grated gruyere cheese
    1/4 cup freshly grated parmesan cheese
    1/4 teaspoon paprika
    1/8 teaspoon cayenne
    1/4 cup chopped scallion
