T's Mashed Potato Casserole W/beef & Beans

Ingredients

    30 oz. potatoes, peels on, cubed & steamed; then mashed with:

    5 tbsp. Butter Buds
    70g. real bacon bits (I like Kirkland), chopped up finer
    5 oz. cheddar cheese (I like Tillamook)
    2.5 tsp. salt & 1 tsp. black pepper

    Scrape all this into 5 or 6 Qt. Nesco...

    11.25 oz. frozen carrots (I like Flav-R-Pac)
    11.25 oz. frozen chopped broccoli (I like Flav-R-Pac)
    ... Steam the carrots; quarter them & add to Nesco...
    ... Steam the broccoli & add to Nesco...
    ..... both of these ~ don't steam all the way done, just 2/3 to 3/4 done ~ they'll finish as everything simmers in the Nesco...

    Add the one can creamed corn (I like Santiam)...
    Add 11.25 oz. frozen peas...

    Finely chop 7.5 oz. each: onions, celery, & spinach; add to the Nesco... dice/chop 7.5 oz. bell peppers ~ use red only...

    Fry up the ground beef in a pan on the stove... when it's almost done add 3/4 tsp. salt & 1/4 tsp. black pepper... then add the onions, celery, spinach, & peppers...

    Drain & rinse 10 oz. white beans (I like S&W); add to Nesco...
