Spinach Parmesan Slather

Ingredients

    4 cups fresh spinach, tightly packed
    Boiling water
    1 cup freshly grated Parmesan Cheese
    1/2 cup reg or low fat mayonnaise
    1/2 cup reg or low fat sour cream
    3 cloves garlic, minced
    1 tablespoon lemon juice
    1 tablespoon Dijon-style mustard
    1 teaspoon drived basil leaves
    1/8 teaspoon cayenne pepper
    1/2 cup pine nuts (toasted)

    Fresh baguette or vegetables.

    Preheat oven to 400 degrees. Butter casserole shallow dish.
    Put spinach in a loarge bowl and cover with boiling water. Press leaves down into the water until they wilt. Drain spinach well and squeeze out all liquid. (may be chopped if desired).
    Place spinach, parmesan chees, mayonnaise, sour cream, parmesan cheese, garlic, lemon joice, mustard, basil leaves, and salt and cyenne into a food processor fitted with a steel blade.
    Process until spinach is finely chopped but not pureed. Spoon nixture into buttered casserole and sprinkle with the pine nuts.
    Can be make up to 12 hours in advance - at this point)
    Bake uncovered for 15 minutes or until lightly browned. Serve hot with baguette slices or fresh cut veggies.
