    1 Garlic Clove, minced
    1 tbsp Lime Juice
    1 tsp Lime Zest
    1 tsp Red Pepper Flakes
    1 tsp Light Coconut Milk
    1 tsp Reduced Sodium Soy Sauce
    1 tsp Extra Virgin Olive Oil
    1 tsp Honey
    Pinch of Black Pepper

    Salad =
    2 Boneless Skinless Chicken Breasts
    2 cups Endive, roughly chopped
    1 Carrot, shredded or cut into strips
    1/4 cup Scallions
    2 tbsp Cashews
    Handful of Tarragon
