Pumpkin Soup, Low Carb Version (with Slight Revisions - Mikelav@ Microsoft.com - Mike Laverty)

Ingredients

    butter, salted, 1 tbsp
    Green bell peppers, chopped, 1/8 cup
    Onions, raw, chopped, 1 tbsp
    Parsley, chopped, 1/2 large sprigs
    Dried Thyme Leaves, 1 dash
    Whole bay leaf, 1/2
    Pumpkin, canned, 7 oz.
    Chicken stock, 1 cup
    canned tomatoes, 1/2 cup
    wheat flour, unbleached, 1 1/2 tsp.
    Half and half, 1/2 cup
    Salt, 1/2 tsp
    Ground Black Pepper, 1 dash

Description

Very Nice Soup!! I Actually Make This In 3 Versions For Our Family --The One Shown Here Is Our Atkins Low Carb Version With Half/half. I Cook All Ingredients Together Till A Certain Point And Use Butter For All Of Us For That Reason.
