- 1/2 onion, 2 cloves garlic, 3 celery stalks chopped small, 1 small carrot chopped small. chicken breast cut into small pieces. 32 oz of low sodium vegetable broth and 2 cups water. 2 cups cherry tomatoes, 1 small red tomato, 1/4 cup basil, 1tsp oregano, 1 tsp thyme, 1/2 tsp sage. 2 sliced zucchini, 1 cup cooked pinto beans, 1/2 cup cooked barley, 1/2 bunch spinach. Parmesan cheese to garnish.
