Womans World Turbo Soup

Ingredients

    1 T olive oil
    2 medium onions, diced
    2 large sweet potatoes with skin,scrubbed, diced into 1/4" cubes
    3 (15 oz each) cans black or kidney beans, drained
    1/3 t. dried orgeano ( 1t. finely chopped fresh) of to taste
    2 cartons (32 oz.) cartons low sodium vegetable or chicken broth
    2t. Sea salt or to taste
    1t. ground cumin
    1t. freshly ground black pepper or to taste
    16 Cups (1lb.) fresh baby spinach
    8 cups chopped kale or other leafy green
    2 c. soybeans (edamame) or roasted chicken breast
    Diced bell pepper
    1T Parmesan Cheese (optional)
