- 3 large cucumbers, peeled and seeded
3 large tomatoes
1 Vidalia onion, peeled
1 can artichokes hearts, in water, drained
1 can chick peas/garbanzo beans, rinsed and drained
12 Kalamata olives, pitted and chopped
1/2 cup crumbled feta
2 cloves fresh garlic, pressed or finely chopped
5 fresh basil leaves, torn or chopped
1 lemon, juiced
1.5 TBSP olive oil
optional: salt and pepper to taste
Description
Being That I'm Half Greek, I Grew Up Eating Tomato, Cucumber, And Feta Salads. This Is My Version From My Childhood Memories. I Sometimes Sprinkle Toasted Pine Nuts On Top With Some Extra Basil. It's Good With Grilled Chicken And Orzo Or Rice.
