Quinoa Patties

Ingredients

    1 cup of quinoa dry, cooked and cooled (makes about 2 cups) - I used the quinoa from bulk barn
    1 cup chopped spinache
    1/4 cup chopped fresh basil
    4 eggs lightly stirred
    1 tsp ground cumin
    1 tsp baking powder
    1 cup diced onion (I used yellow onion)
    3 garlic cloves, chopped
    1 cup bread crumbs
    1/4 cup parmesan cheese
    30-60 grams of shredded cheddar cheese
