    Ć 2 red onions, sliced
    Ć 3 garlic cloves, finely chopped
    Ć 1 tbs plain flour
    Ć 3 tsp cumin seeds
    Ć 1 1/2 tsp ground turmeric
    Ć 1 tsp paprika
    Ć 1 1/2 kg boned lamb shoulder, trimmed of fat, cut into 2.5cm cubes
    Ć 750mls (3 cups) chicken stock
    Ć 2 cinnamon sticks
    600g orange sweet potato (kumara)
    Ć 150g Kalamata olives
    Ć 1 lemon
    Ć Salt & ground black pepper, to taste
    Ć 2 tsp brown sugar, or to taste
    Ć 1/3 cup chopped fresh coriander
    Ć Couscous, prepared, to serve
