Tofu And Veggie Stirfry With Thai Sweet Chili Sauce

Ingredients

    1 block extra firm tofu - cut into cubes
    1 tbsp olive oil
    2 carrots - peeled and sliced
    2 celery stalks - sliced
    1/2 head medium cabbage - chopped
    1 yellow squash - sliced
    1 zucchini - sliced
    1 small yellow onion - sliced
    1/2 bell pepper (any color) - sliced
    2 tbsp canola oil

    For the Sauce:
    1 clove garlic - minced
    1/2 tsp chopped ginger (1/4tsp if you are using dry/ground ginger)
    1 can light coconut milk
    1/2 cup Sweet Chili Sauce (I used Mae Ploy)
    1 tsp canola oil

    3 cups cooked long grain brown rice
