Cheesy Chicken Watchamacallit

Ingredients

    1½ 375 g packages broad egg noodles (about 1 lb/500 g)
    1tbsp (15 mL) olive or vegetable oil
    3cups (375 mL) thickly sliced fresh mushrooms
    1½lb (750 g) skinless, boneless chicken breasts, cut into 1⁄2 in (1 cm) chunks (about 4 breasts)
    2tbsp (30 mL) butter
    2tbsp (30 mL) all-purpose flour
    2½cups (625 mL) milk
    4oz (125 g) cream cheese, cut into bits (about half a 250 g package)
    4cups (1 L) baby spinach leaves, rinsed
    ¾cup (175 mL) grated Parmesan cheese, divided
    2tsp (10 mL) salt
    ½tsp (2 mL) pepper
    ½tsp (2 mL) crumbled dried thyme
    ¼cup (50 mL) bread crumbs, dry or fresh
