Bacon Cheddar Scones

Ingredients

    1 1/4 cup almond flour (press down into cup to measure) (I used 0.75 c. almond flour and 0.75 c. flax meal)1/4 tsp. baking soda (I used 0.5 tsp. baking powder)1/4 tsp. salt
    1/2 c. grated sharp cheddar cheese
    4 slices bacon, cooked crisp and chopped (more would be good too)
    1/4 c. melted bacon fat (omitted)1 large egg, beaten (online commenters suggested another egg; I used 1 egg and 0.5 c. egg whites to also compensate for the bacon fat)Mix all thoroughly, make 5 balls and place on greased cookie sheet (I used a pie pan). Mash down a bit, or shape into scone shape (whatever that means to you). (I had 9 small scones with no problem. 5 must be humungous)
