Snapper Tacos With Chipotle Cream

Ingredients

    1/4 cup reduced fat sour cream
    1/16 (pinch) teaspoon salt
    1/2 canned chipotle chile in adobo sauce, seeded and minced (may substitue jalapenos)
    3/4 cups chopped onion, divided
    3/4 cups chopped tomato, seeded, divided
    1 tablespoon butter
    1/4 teaspoon ground cumin
    1/4 teaspoon salt
    1/4 teaspoon ground cinnamon
    2 garlic cloves, minced
    1 1/2 tablespoons chopped fresh cilantro (or 1 tsp dried)
    1/2 pound red snapper fillets, skinned (or rockfish, catfish, sole, grouper, swordfish, or talipia, also shrimp!)
    1/2 teaspoon grated lime rind
    1 tablespoon fresh lime juice
    2 (8-inch) flour tortillas
