Ingredients

    1 lb shrimp, thawed
    4 tbsp olive oil
    Juice of 1 lemon
    2 garlic cloves, crushed
    1/2 tsp salt
    1/2 tsp pepper
    1 cup grape tomatoes, halved
    3/4 cup kalamata olives, halved
    2 zucchini, coarsely chopped
    1 cup flat-leaf parsley, coarsely chopped
    3 oz fat-free feta, crumbled
    1 box quinoa, cooked to package directions
