Ingredients
- 1 roasted bell pepper (used yellow)
1 large onion, minced
3 cloves garlic, minced
4 vine ripened, fresh tomatoes
1/2 pkg of turkey bacon, approx. 240 grams
1 Tbsp olive oil
1 Tbsp dried basil
1 tsp paprika
1 tsp Mrs. Dash Spicy Blend
1 tsp chili powder
2 14.5-oz. cans of whole tomatoes, no salt added
2 15.5 oz. cans of red kidney beans, no salt added
1 bunch of fresh spinach (used 60g baby spinach)
1/2 tsp Goya Adobo Light seasoning, or to taste
1 Tbsp black pepper, or to taste
Optional:
- add annato extract from boiling annato seeds
Original recipe called for these ingredients (that I did not use):
-- 2 Tbs. sofrito (pre-made mixture of tomatoes, garlic, peppers, cilantro & some more exotic spices, usually includes lard)
-- 1 tsp agave syrup (like honey from the agave cactus)
