Spicy Asian Chicken Soup With Greens And Mushrooms

Ingredients

    48 oz low sodium chicken broth or stock
    1/4 c low sodium soy sauce
    1 t chili garlic sauce (or more if you like spicy)
    2 T lime juice
    1" cube of ginger, peeled and cut into 8 slices
    2-3 cloves of garlic, sliced in two
    8.5 oz chicken (raw or cooked)
    2 c mushrooms (I used mix of cremini and button)
    8 c kale (orig recipe called for baby spinach)
    1 red bell pepper, julienned
    1 t lime zest
    2 T cilantro (opt)
    4-6 scallions, chopped, white and some green (opt)

Description

I Adapted This From A Recipe On Www.epicurious.com Because I Wanted To Clean Out The Fridge. This Spicy, Light And Excellent Medicine For A Cold. I Use Unsalted Homemade Stock So My Soup Is Not As High In Sodium As The Nutritional Info Here.
