    1 cup drained pinto beans
    1 tsp cilantro
    1 tsp. cayenne pepper (optional, to taste)
    1 tsp salt
    2 cups (approx 1 big bundle) Kale Rinsed, middle stem cut out and chopped
    1 lb extra lean ground beef
    Large tortillas: Trader Joe's Jalepeno Tortillas are great or use large Mission Low Carb Tortillas
    2% shredded mozzerella cheese 1/8th cup per tortilla
    Fresh sliced jalepeno pepper
    3 Roma Tomatoes, sliced (optional not in photo)
