Rainbow Vegetable Couscous

Ingredients

    1 cup uncooked whole wheat couscous
    1/2 cup chopped red onion
    1/2 cup chopped mushrooms (your choice of flavor)
    1 cup grape tomatoes, chopped
    1/4 cup sliced raw carrots
    1/2 cup chopped English cucumbers
    1 ounce Feta cheese
    8 tablespoons (or to taste) Ken's Sundried Tomato Vinegrette
