- 1 Bag of Spinach
1 cup of cherry tomatos
1/4 cup (1 can) sliced Black olives
1 large Red Bell Pepper
2 Small cucumbers (or 1 large)
1 can of Chick peas (1 3/4 cup)
4 Tbsps of Vegan Parmesan (1/4 cup ground almonds plus Tbsp of Nutritional yeast)
(OR regular Parmesan or feta cheese for non-vegans)
Dressing:
1/4 cup olive oil
1/4 cup lemon juice
4 Tbsp of Fresh oregano
salt and pepper to taste
