Tomato, Corn And Bean Salad

Ingredients

    Makes 3 servings

    Salad:
    3 ears sweet corn
    1½ cup cannellini or black beans (rinse first)
    3 ripe Tomatoes, diced
    Watercress (and/or arugula or other greens)
    A few Tbsp of fresh cilantro or basil, sliced
    1 ½ Cup Napa cabbage

    Vinaigrette:
    3 Tablespoons extra virgin olive oil
    6 Tablespoons total: Balsamic Vinegar and/or juice of fresh Lime
    .25 teaspoon mustard
    sea salt and pepper (a couple of shakes each)
    lime slices optional for decoration
